Turn of the century Château des Crayères, set in a 21-acre park, was the residence of the Pommery and de Polignac families (owners of Champagne Pommery) until 1983 when Gérard and Elyane Boyer turned it into a sumptuous 19-room hotel and restaurant.<br /><br />Gérard Boyer and his father won their first Michelin star in 1966, a second star in 1971 and a third star in 1979. Les Crayères is one of the top properties of Relais & Châteaux hotels.<br /><br />One of the few restaurants where champagne is correctly used just as a go-along sparkling wine married to a dish (instead of a celebration drink), followed by a red wine.
